How do you get them from getting all weird on you? Everytime I cut a dolls hair, it sticks out.

For the bangs, I combed a little petroleum jelly on the bang. I somewhat works as a gel and helps it stay down.

Ok. Just as a little side note though, the right side seems to be a little tiny bit higher than the left.

My advice is just trim up the left side a little and leave the middle alone. That way it's more even without the risk of damaging middle of the bang.

If your doll's bangs sticks out, there are a couple things you can do:
1. This is the method also used for boil-perms: Pour nearly-boiling water over it. (Not sure why it can't be boiling water, but I've always heard to use nearly boiling water) Do it over the sink, and hold the doll's head with tongs or something similar, so your hands and fingers won't get scalded. Then run the doll's head under the faucet with running COLD water and let dry. The near boiling water helps the hair to lay down, and the pouring cold water afterward helps to set it so once dry, it won't stick up again.
2. This is a method I heard about from a fellow Barbie collector: wrap saran wrap around the doll's head where the bangs are and set the head aside for a few days. secure with scotch tape if necessary. Then, remove the saran wrap and the bangs should be laying down.

Another of my (successful) hair changes.
I've never really had a connection with my SpCh Delancey for some reason ever since I unpackaged her and always find her at the bottom of my doll storage box.  Some of her cons are that her hair isn't easy to comb and is uber stiff, even when I added some Garnier to soften it and her bangs always stuck out like crazy and friggin' irritated me, so....
I REMOVED THEM!!

No, just used scissors. I gathered all the bangs with 2 fingers and cut most of them off, then I carefully snipped the other part closer to her roots off carefully.

Now that you mention it, I can kinda see where the bangs used to be. But it blends with the hair so it's hardly noticable.
